The ultimate comfort recipe for leftover roast chicken or to enjoy dishes of the week!
* Ingredients :
°1 1/2 cups celery, carrots, onions, diced
°1.5 liters of chicken broth
°1 bay leaf
°3/4 cup white rice
°3 cups cooked chicken 750 ml cubes
°30 ml (2 tablespoons) butter
+my choice:
°1 sprig of fresh thyme
°60 ml (1/4 cup) fresh chopped parsley
* Preparation :
In a saucepan, melt the butter over medium heat.
Cook vegetable blend about 2 to 3 min.
Pour in chicken-broth &; permit to boil.
Adding bay leaf & thyme if wanted .
Salt & Pepper.
Covering also siimmer for 10 min on low-medium heat.
Stir the rice and bring it to a boil, then put it back on a low heat.
cooking about 18 to 20 min .
Add chicken and parsley, if desired. Stir and heat for 1 minute.
