1 pound of ground meat
Chopped onion, one medium-sized
2 minced garlic cloves
Diced tomatoes, one can (15 oz.)
One 15-ounce can of tomato sauce
1 can (15 oz) of rinsed and drained kidney beans
1 can of black beans, 15 ounces (after draining and rinsing),
Diced green chiles, one 4-ounce can
Taco seasoning, one packet
chile powder, 1 teaspoon
One teaspoon of cumin
Garnish with salt and pepper as desired.
4 tablespoons Cheetos Fritos
Cheddar cheese, 2 cups shredded
Green onions, chopped (if desired)
Extra sour cream, if desired
How to Follow
1. Cook the ground beef until it's thoroughly done in a big pan over medium heat. Clear away any surplus of fat.
2. Cook the minced garlic and chopped onion in a pan until the onion becomes transparent.
3. Place the meat mixture in a slow cooker. Include the kidney beans, black beans, chopped green chilies, tomato sauce, diced tomatoes, cumin, salt, pepper, taco spice, and chili powder. Mix thoroughly.
4. Simmer for 6-8 hours on low heat or 3-4 hours on high heat.
5. Arrange a layer of Fritos corn chips at the base of each serving dish just before serving. Serve the chips with the chili mixture spooned on top.
6 If you choose, top it with some sour cream, chopped green onions, and shredded cheddar cheese.
Changes and Hints

To make it vegetarian, just use a meat replacement made from plants or add more beans and veggies in lieu of the ground beef. Throw in some sliced jalapeo or hot sauce for a hotter chili if you like it on the spicy side. To make it lighter, you may use chicken or turkey for the beef. If you want to change things up a little, try using pepper jack or Monterey jack cheese instead. Finally, for some added nutrition and texture, think about throwing in some bell peppers or corn kernels.
