First, remove the cuts of meat from the refrigerator 30 to 60 minutes before cooking.
Salt each piece of meat on both sides just before cooking.
Heat a frying pan until very hot and add a drizzle of oil and a good knob of butter.
When the butter no longer foams, place the pieces of meat in it.
When the time comes, depending on the cooking time, turn the pieces over and baste them 2 or 3 times with the fat from the pan.
Remove from the oven or when serving, if desired, pepper the pieces of meat.
