These are delicious cookies that first crumble in the mouth and then melt. The nuts that are used as a coating are roasted during cooking and bring a crunchy texture and an incomparable taste mixed with the sweetness of marmalade...
*Ingredients (for about 30 cookies):
+dough :
°200 gm soft butter
°70 grams of sugar
°1 sachet of vanilla sugar
°2 egg yolks
°pinch of salt
°240 g flour
+more :
°2 egg whites
°100 gm cashews, not finely chopped
°1 small jar of homemade fig jam (or other jam)
* Methods :
In a bowl, mix soft butter with sugar and vanilla sugar to get a creamy mixture.
Add the egg yolks one at a time and mix again to combine them.
Add salt and half the flour. Mix for a few seconds on low speed to get a homogeneous mixture.
Add the rest of the flour and combine with a spoon (or by hand). The dough is soft and a little sticky, this is normal.
Make a ball, wrap it in plastic wrap, and put it in the fridge for an hour.
Preheat oven 180 degrees, alternating heat.
In bowl, whisk egg white with fork.
Elsewhere the walnuts are finely chopped. There should be some chips that will add crunch to the shortbread.
Taking dough out of refrigerator. Take small pieces of dough the size of a walnut and make small balls out of them.
Roll it in egg whites and then in nuts.
Placing balls on baking sheet cover with parchment paper, slightly space apart.
With the end of the wooden spoon, make a hollow in the middle of each ball by pushing the dough.
Baking also bake about 12-13 min
Once done, take them out of the oven and push the dough back in the middle to make a cavity (it will swell slightly during cooking).
Put a little marmalade in each cavity.
Place on a serving plate and sprinkle with powdered sugar, if desired.
