Served this up twice, and both times it was excellent! Looking forward to doing it again.

6-8
Two cups of cooked and shredded chicken (rotisserie chicken is excellent!) and one 25-ounce bag of frozen cheese ravioli
1 jar of Alfredo sauce (16 oz.)
- 1/2 cup of mozzarella cheese after shredding
Grated Parmesan cheese, measuring one cup
Italian seasoning, measuring one teaspoon
- One 15-ounce ricotta cheese carton - If desired, some fresh parsley to garnish
What to do
1. Coat the interior of your slow cooker with a little oil.
Put a dab of Alfredo sauce on the underside to keep it from sticking.
Third, spread half of the frozen ravioli evenly over the sauce.
4. Top the ravioli with a mixture of shredded chicken and half of the leftover Alfredo sauce.
5. Before topping the chicken layer with half of the ricotta cheese, mozzarella, and Parmesan, spoon half of the ricotta cheese into dollops. On top of the cheese, sprinkle some Italian spice.
Layer the remaining ravioli, chicken and Alfredo sauce, ricotta, and mozzarella and Parmesan in the same order as before. 6.
7. Simmer, covered, for four to six hours on low heat, or until ravioli is soft and cheese is melted and bubbling.
If you'd like, you may top it up with some fresh parsley right before serving.
Suggestions and Alterations—Simply substitute sautéed spinach or mushrooms for the chicken for a vegetarian option.
Is a little heat what you're after? For a spicy Alfredo, add some red pepper flakes.
–What, no slow cooker?  Sure thing! After 50 minutes of covered baking at 375°F, uncover and continue baking for another 10 minutes to achieve a golden brown on top of the cheese.
