A little improvisation of an evening when I tried to dispose of the tortillas lying around in my cupboard.
*Ingredients / for 3 people :
°3 tortillas (here, they were wheat pancakes)
°2 beautiful apples
°1 handful of raisins
°1 tablespoon of lemon juice
°3 tbsp powdered sugar
°1 tablespoon of cornstarch
°1 pinch of cinnamon
°Flaked almonds
For the sauce:
°12.5 cl of apple juice
°10g caster sugar
°10 g brown sugar
°10g butter
*PREPERATION
1Start by lightly buttering a gratin dish. In a bowl, combine the sugar and cornstarch with the cinnamon and set aside.
2In a frying pan, melt a knob of butter and brown the apples, peeled, seeded and diced, until they begin to "stew". Pour in the lemon juice and raisins. Mix and sprinkle with the sugar-cornstarch-cinnamon preparation. Leave to caramelize for a few minutes and remove from the heat.

3In a saucepan, boil the apple juice with the sugars and butter for 2 to 3 minutes.
4Fill the tortillas with the apple filling and seal tightly (same folding as for the spring rolls) and place in the buttered dish. Pour the sauce (which should be slightly syrupy) over it and sprinkle with cinnamon (if you like the taste) and slivered almonds (crushed walnuts, that does it too !.
To finish
Place in a hot oven for 15 minutes (between 180 ° C and 210 ° C depending on the power of the oven).
